Raclette? Have you ever heard of such cheese? We played with the letters, and came up with Carlet cheese – a semi-hard cheese made from goat's milk . The head of cheese is almost half a meter in diameter.
Cheese weight – 12-14 kg,
Due to aging from six months, the cheese gets a brown hard crust and at the same time a pleasant elastic and buttery texture.
When making this cheese, our cheesemakers were inspired by the famous raclette cheese.
Taste notes:
Carlet has an edible crust, an elastic, elastic texture and an extremely milky-creamy primary taste, which changes several times during the tasting process. Here you can feel both spices and nuts, in some places – salted caramel. In a word – complex and harmonious.
How to enjoy it:
Carlet cheese is perfect for a cheese dish, it is important to cut it into thin “plates” in order to fully experience the whole bouquet of aromas and tastes. Often, this type of cheese is added to the traditional French quiche Loren pie, or sprinkled on hot dishes and salads. And, of course, it will be an indispensable ingredient in the preparation of cheese fondue, which will be so appropriate in the cold season:)
